How funky is your chicken?

Lots of people these days, especially those with families, are on a budget it seems when it comes to what’s cooked for family meals. What’s frustrating, to me, is when I’m looking for recipes online and it feels like all I can find are recipes with expensive ingredients, or ingredients I’m just not going to use for much of anything else. Pork tenderloin, beef filets, fancy ass cheeses and fresh herbs can all be pretty fucking expensive! One ingredient that is not expensive, however, is chicken! But with chicken, you can find yourself making the same dishes over, and over again.

I really love chicken, and recently I’ve been on a mission to try new and tasty things with it. I’ve found and tried some really fantastic recipes for chicken, and I wanted to share them here 🙂


Cheddar Jalapeno chicken burgers with guacamole. I made these last week, and they were so delicious! I found the original recipe on What’s Gaby Cooking, but I made some changes to it, and included my own guacamole recipe. My recipe can be found here 🙂


Baked chicken stuffed with pesto and cheese. I really love stuffed chicken breasts. It’s easy to do, there are so many options, not to mention it’s fucking delicious. This particular recipe is looking great to me because I love pesto, and I love cheese. You can find this recipe on Food To Cook.


Fried chicken FTW! Fried chicken is not only a classic and a family favorite, but it’s a definite indulgence. It’s crispy on the outside, and juicy on the inside! Problem is, there are so many fried chicken recipes online and it’s hard to find a truly good one. But I turned to Martha Stewart for this one.


Honey-lime chicken skewers. I am making this tonight! A few weeks ago I basted a roasted chicken with a honey glaze, and it was so good! I think the combination of honey and lime sounds divine. This recipe can be found on Kitchen Meets Girl.


Chicken Parmesan meatballs. I love meatballs. I love chicken. Chicken meatballs stuffed with cheese? Fuck me sideways. These look really easy to make, and they look effing delicious to boot! Thank you Recipe By Photo for this one!


Nutella madness!

When Nutella became popular, it cracked me up how many people were under the impression that it was healthy and better for you than other nut-butters. All you have to do is look at the ingredients, and if you’ve got half a brain, you’ll see that it is anything but good for you. I mean hello! Anyone that has a love affair with Ferrero Rocher will tell you they about died and went to heaven when they tried Nutella for the first time, as that is the chocolatey goodness that’s been placed inside those candies by the hands of the baby Jesus.

Once everyone finally admitted to themselves that Nutella was actually not healthy, the awesome Nutella recipes began to surface all over Pinterest. Today I decided to check out some of these recipes, because I’ve been dying to make some kind of a delicious dessert with Nutella in it. So I went on Pinterest, and put “Nutella recipes” in the search bar. I practically had a stroke just from looking at the hundreds upon hundreds of recipes. There were recipes for brownies, cheesecake, donuts, mousse, pancakes, pizza, sticky buns, french toast, truffles, tarts, cakes, cupcakes, the list goes on. People are fucking mad for Nutella.

And I am about to jump on the crazy train as well. Time to look for my extra-fat-pants.

With all the recipes there were, I just started opening the recipes that made me go holy Jesus! and then narrowed it down to the most delicious looking Nutella recipes.

Here they are!


Nutella brownies is first up on the list. This would make you a hero at the bake-sale if you brought these! The recipe for these brownies is featured on My Baking Addiction, and you can find the recipe here.


Nutella french toast roll-ups. To the woman on her period that created these, I thank you, from the bottom of my heart. French toast is so awesome, and you just made it awesom-er. This recipe is on Diethood, and you can find it here.


Nutella brie bites. This made me cream my pants a little bit…. It’s squares of puff pastry with wedges of brie, topped with Nutella. It’s on Bevcooks, and you can find the recipe here.


FUCKING NUTELLA TRUFFLES!!!! Clearly I love truffles…. They are so good. And with Nutella? Yes, please! This recipe is also on My Baking Addiction, found here.

Feta, spinach, onion and pepper quesadillas!

It’s lunch time! I made something today for my lunch that I’ve made hundreds of times since I found the recipe on Pinterest. It’s a quesadilla filled with feta cheese, caramelized onions and peppers, and spinach. It sounds like a somewhat odd combination, but it is really delicious, and I haven’t met a single person I’ve shared this recipe with that didn’t love it. My son loves it too, and I would definitely consider it a kid friendly recipe as it is very rich tasting, but has lots of veggies in it. It’s a recipe I would also consider a pretty healthy one. With all the spinach, you can’t go wrong! And one reason I love feta cheese so much is it has far fewer calories than most other cheeses, but still packs a lot of flavor.

Please excuse how dark this picture is! I scarfed down my lunch before realizing I hadn’t snapped a picture of it, and I had to go looking through my Instagram pictures to find one of it.


  • One large tortilla
  • 1/2 cup feta cheese
  • One and a half cups spinach, chopped
  • 1/4 cup onions, sliced
  • 1/4 cup yellow peppers, sliced
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon butter

In a skillet, heat up oil and butter. The best reason to use a combination is because the butter keeps the oil from burning. Add peppers and onions, with a little salt, and saute until both are caramelized. Only add spinach when the peppers and onions are finished, because spinach cooks very quickly! Put in a bowl and set aside. Put a little more oil in the skillet, and lay the tortilla flat inside. Put your cheese on one half of the tortilla, add veggies, and fold. Cook until crisp on both sides.

Spinach artichoke bites

A couple weeks ago I was at the grocery store, and I saw these delicious looking appetizers called “bags of gold”. It was like artichoke dip wrapped in pastry, definitely one of the tastiest things I’ve tried. I love spinach and artichoke, so they were a real winner for me.

Last night while I was on Pinterest, I saw a recipe on Recipe by Photo called spinach artichoke bites. Yes! I am making these tonight or tomorrow, depending how stressful my annoying ass customers are today. For now, you can find the recipe here, and enjoy this food porn I am about to unleash upon you!

UPDATE: I made these last night, and they were delicious! I did, however, make a few changes to the recipe. I swapped out the mayonnaise for sour cream, and used fresh spinach instead of frozen. I also added some shredded mozzarella to the mixture instead of sprinkling it on top before baking.


S’mores pancakes!

Today is my little brother’s 13th birthday. Since the whole family works weekends and we aren’t celebrating his birthday until Monday, I decided to make him a special breakfast. Last week while on a pinning frenzy, I came across a recipe for s’mores pancakes. I instantly decided on these for the birthday breakfast, because they look decadent and delicious!

I do have some issues with the original recipe, however. The recipe calls for whole wheat flour, applesauce, and fat-free milk. I mean, really? I think the original creator of this wanted to make herself feel better about eating these by adding these ingredients, but if you’re going to have a carb party, you gotta do it right! My recipe of this will include my favorite pancake recipe. Enjoy!


  • One and a half cups all-purpose flour
  • Three and a half teaspoons baking powder
  • One teaspoon salt
  • One tablespoon granulated sugar
  • One and a quarter cups milk
  • One egg
  • Three tablespoons melted butter
  • One cup graham crackers, crumbled into nickel sized pieces
  • Half cup chocolate chips
  • One container marshmallow fluff
  • Two tablespoons water

To make your Pancake mix put flour, baking powder, salt and sugar in a large bowl and mix. Put a well in the middle, and put in the milk, egg and melted butter. Mix until smooth and add chocolate chips and graham cracker crumbs.

While your making your pancakes, put the marshmallow fluff and water in a microwave-safe bowl. Stick it in the microwave and heat for 30 seconds and stir.

Don’t be shy, be generous with that marshmallow syrup because it’s like the best, ever!

Grilled spinach and avocado sandwich with muenster cheese and feta.

Good morning bitches! Or evening, wherever you may reside. I’ve got another busy day, but I wanted to share a quick recipe before I start my work for the day. I discovered this recipe on Pinterest(you’ll notice a trend…I love Pinterest, and shamelessly!), and it is one of the yummiest recipes I’ve come across. It has all my favorite elements; avocado, spinach, and CHEESE. It seems like a really naughty lunch to eat if you’re trying to keep track of your calories, but it’s a great lunch to have. Avocado is full of healthy fats, spinach is good for you, and the cheese gives it a rich and creamy taste that you just can’t beat. The original recipe calls for goat cheese. I mentioned in a previous post how I feel about goat cheese, no. Just, no. Whenever I see goat cheese in a recipe I always swap it out for feta because the texture is similar but it doesn’t taste like shit.



  • Two slices wheat bread
  • Half avocado, sliced
  • Half cup of spinach, chopped
  • One slice Muenster cheese
  • 1/4 cup feta cheese

Add a little olive oil to a pan on medium heat. When the pan is hot, put one slice of bread on said pan. Sprinkle your feta cheese on the bread first(so it doesn’t fall off of your sandwich while you’re making it. That would be tragic.), and then add your Muenster cheese. Add your chopped spinach(I suggest chopping it because trying to put whole leaves of spinach on this sandwich is a real bitch), and put your avocado slices on top. When the bottom of your bread slice is toasted and the cheese is starting to melt, put your spatula under it. Put your other bread slice on top, and carefully flip it over so all the goodies on the inside won’t fall out(again, that would be tragic).

Polka dot birthday cake.

I’m going to be pretty busy with work this weekend and won’t be cooking. I know, I’m so lazy! But there was a recipe I really wanted to share for you all this weekend. My son’s birthday was a couple of weeks ago, and I decided to do a polka dot birthday cake that I saw a picture tutorial for on Pinterest. The cake looks awesome, and the best part was that it was relatively easy to make. Here is the original picture tutorial that I saw on Pinterest.


I didn’t bake the whole cake from scratch. Baking and decorating a cake is a lot of fucking work. With all the other crap I had to do in order to prepare for my son’s party, I decided to opt for boxed cake mix and pre made frosting. To see the complete tutorial on Once Upon a Pedestal, go here.

As I said before, this was really easy to make, so do not feel intimidated! It is a little time consuming, but you’ll love it if you take the time out to do it, and it is a huge crowd pleaser!
